How to Make Low-Carb Ice Cream

Low-carb ice cream is easy to make at home and tastes just as creamy as the sugary kind. You only need a few ingredients and about 10 minutes of prep.

Ingredients

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk or coconut milk
  • 3 tablespoons erythritol, allulose, or monk fruit sweetener
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Mix all ingredients in a bowl until the sweetener dissolves.
  2. Chill the mixture for 30 minutes for a smoother texture.
  3. Churn in an ice cream maker for 15–20 minutes, or freeze in a container and stir every 30 minutes until firm.
  4. Serve plain or add low-carb mix-ins like dark chocolate chips or nuts.

Tips

  • For extra creaminess, add one egg yolk or a tablespoon of vodka to prevent ice crystals.
  • Keep portions small—this is rich and satisfying.

Homemade low-carb ice cream gives you all the flavor without the sugar crash.
